At the table of the Ferme du Poulet it's a little of all this that you enjoy in the dishes "freshness" prepared with passion by our chef, Olivier Degand. a native of Troyes.
World Champion Pâté-Croûte in 2016 "Toques blancs Lyonnaises", Maître Restaurateur and Master Cook of France, Olivier puts his talent and experience acquired from the age of 17 with the major names in French cooking, serving inventive fine and tasty fare. Previously chef de partie, second chef and then chef, Olivier evolved in prestigious houses recognised by Michelin and Gault & Millau guides: Gérard Boyer in Reims (La Chaumière), Michel Guérard Eugénie-les-Bains ( Eugenie's Meadows), Jacques Maximin in Paris (Le Doyen) as well as at the Palais de l'Elysée.
At his table, you will have the pleasure of (re) discovering subtly revisited regional dishes. Dishes, between land and sea or lake and river celebrating the beautiful regional soil according to our seasons. Dishes, that Catherine, the wife of Olivier, sommelier, will help you to accompany wines most adapted to these delicate marriages of flavors.
